Going the culinary route with Luz Dary Cogollo

South American carrier LATAM Airlines is partly going the culinary route to attract more tourists to its home continent.
The airline has just released a YouTube video showing prominent Bogota chef Luz Dary Cogollo — who has a restaurant in the Colombian capital — demonstrating for viewers how to make the popular Colombian dish ajiaco.
The video follows another featuring a Peruvian chef preparing popular Peruvian dish ceviche while Andean music — synonymous with Peruvian culture — played in the background.
More cooking videos are planned by the airline.
The cheerful, energetic Dary Cogollo was working in a spotlessly clean kitchen while she prepared ajiaco and used the video to put in a plug for the tourism trade in Bogota and the rest of Colombia.
“I want all of you to check out the hash tag #FlavorsofSouthAmerica so that you can share and invite people to make this delicious Colombian recipe,” she said. “And I’d like you to take a LATAM flight, come to Colombia and immerse yourself in this historical centre of Colombia, La Candelaria. You will find museums, historical streets, marvellous places and beautiful houses.”
La Candelaria is known in part for its Spanish colonial architecture and many believe it was the site where Bogota was founded nearly 500 years ago.
Dary Cogollo, who arrived in Bogota from Colombia’s Caribbean region some 40 years ago, operates Casa Mama Luz, which serves traditional Colombian dishes and enables visitors to learn how to prepare them.
She said Colombia’s varied landscapes and climates enable it to produce different foods that lead to a variety of dishes.
LATAM flies to Colombia from six North American cities and its network reaches throughout the Latin American country, including such cities as Bogota, Cartagena, Cali and Medellin.
